With summer just around the corner, thoughts are turning to shedding a few pounds. If you're working on your bikini body, my new series of WeightWatchers-pointed recipes might be just the ticket!

To get you started, here's a great stir fry, which I adapted from an old WeightWatchers 'Your Week' recipe from way back. The original beef version is also scrummy, but I like to use chicken to keep the points down.

WeightWatchers Chicken Stir Fry

WeightWatchers Pro Points: 9pts per person PLUS any additional points for oil

Need fewer points? Halve or even leave out the noodles altogether - plenty of zero point veg makes this a very filling dish without them and it'll SAVE you up to 4 pro points!

Fancy a little extra? Try adding prawns for an additional 1 pro point per 60g portion (peeled & cooked)

Cooking Time: Less than 30 minutes

This one doesn't have exact timings, it's more of a "bung it in and cook to taste" kinda recipe!

The brands listed in brackets below are my speciality ingredients of choice, which can be purchased in any Chinese supermarket. I get mine from the Day In, in Birmingham's Chinatown.

Naturally, you can use any brand and I've also listed alternatives for those ingredients you might not find readily available.

Chinkiang Black Rice Vinegar

Ingredients:

See notes at the end of this post for an explanation of the points values.

  • 2 skinless chicken breasts - 165g fillet = 4pts per person
  • 2 tbsp light soy sauce (Pearl River Bridge, Superior Light)
  • 2 tbsp dark soy sauce (Pearl River Bridge, Superior Dark)
  • 2 tbsp sweet chilli sauce = 1pt per person
  • 2 tbsp Chinkiang Black Rice Vinegar (Gold Plum). The closest alternative to black rice vinegar is Balsamic or Apple Cider vinegar.
  • 1 tbsp Shaoxing Chinese Rice Wine (Silk Road). The closest alternative to Chinese rice wine is Pale Dry Sherry.
  • 1 clove of garlic or 1 tsp lazy garlic (yes, I am that lazy!)
  • 1 finger of ginger or 1 tsp of lazy ginger (ditto lazy comment)
  • 1 red chilli, chopped (with seeds in or removed according to taste) or 1 tsp of lazy chilli (do you see a pattern here?)
  • 1 tsp Chinese Five Spice
  • White pepper
  • 1-2 onions, sliced
  • 1 red bell pepper, sliced
  • Vegetables of choice, e.g. Broccoli, Cauliflower, Stir Fry Veg, etc. I use Sainsbury's Basics Stir Fry Veg which, at a quid for a whopping 700g bag, is fantastic value.
  • Noodles of choice (40g dry medium egg noodles = 4pts per person)
  • Cooking oil - zero point spray oil or pointable Sesame or other oil (points subject to amount used)

Method:
  • Dice the chicken
  • Slice the onions and pepper and (if you're not being lazy) chop the garlic, ginger and chilli
  • Wok on! (Or a frying pan if you don't have a wok)
  • While the wok is heating up, cook the noodles according to packet instructions and drain
  • When the wok is hot, add and heat the oil
  • Add and brown the chicken
  • Add the sliced onions and cook for a minute or so
  • Add your garlic, ginger and chilli and stir
  • Add each of the wet ingredients, stirring in between
  • Add any hard veg now, turning over to ensure the sauce covers all ingredients
  • Cook for a minute or so
  • Stir in your pepper
  • Continue cooking, turning all the ingredients
  • Add the Chinese Five Spice and a "shake" of white pepper
  • If using stir fry veg, add this now (as you'll want it to remain crispy) and coat in the sauce
  • Cook for a further couple of minutes or so, continuing to turn all the ingredients
  • Add the cooked noodles
  • Turn all the ingredients until the noodles are coated
  • Cook for a further minute
  • Serve
  • Enjoy!
